I want to share with you this simple yet extremely delicious recipe for Banitsa Muffins. Banitsa is traditional Bulgarian pastry which is usually served for breakfast but no one would say “No!” to a slice any time during the day. I modified the original recipe because it takes more time to prepare and I needed savoury muffins for a party. I hope you will try out this recipe at home and share the results!
- 250g Phyllo dough
- 200g Bulgarian cheese (you can use feta as well)
- 3 eggs
- 50g oil or melted butter
- 5g baking powder/backpulver
- 150g carbonated water or Bulgarian yoghurt
Preheat the oven to 200º C. As shown on the picture bellow: whisk the eggs by hand in a bowl and add the cheese.
Add the phyllo sheets by tearing them into smaller sheets. It is important to tear the sheets one by one not many at once so that they can soak the moist ingredients.
Whisk good every time you tear a sheet into smaller pieces. This part will take around 10 min so don`t be very precise when tearing the sheets.
Once you mixed the phyllo sheets with the eggs and the cheese. Add carbonated water.
Mix the ingredients well. Add the oil/melted butter and baking powder/backpulver. Mix.
Your mixture should look like this. There shouldn`t be much liquid otherwise your muffins won`t bake well. If you think the liquid is more add more of the phyllo sheets, you can also add more cheese.
Grease the bottom and sides of your muffin form. Add the mixture by filling the forms as shown on the picture (leave some space because their size will double). Put them in the oven and bake for 20-30 min, or until golden brown.
Mmmmm, even my teddy bear got excited by the look of these gorgeous muffins.
